Notes on ingredients

Truvia sweetener

You will notice that I use Truvia sweetener in some of my recipes.  It is expensive, but 1/3rd of a teaspoon sweetens like 1 teaspoon of sugar so a little goes a long way.

I use the granular Truvia in the spoonable jar, not the baking blend which is mixed with sugar.  I have worked out a conversion table, based on using a third of the volume of sugar.  Of course you cannot just replace the sugar with sweetener and expect the same result, which is why I usually end up fiddling with the quantities of other ingredients too.  But the following quantities of Truvia should give you a similar level of sweetness to the sugar.

Caster sugar      Caster sugar      Truvia
weight            volume            weight

55g               1/4cup            12g
75g               1/3cup            16g
110g              1/2cup            24g
150g              2/3cup            32g
165g              3/4cup            36g
220g              1cup              48g
275g              1&1/4cups         60g

There is much debate on the web about the advantages and disadvantages of Truvia.  We have yet to see any side effects of using it in small quantities but I am working on cutting out artificial sweeteners altogether.

More to follow soon!
